morning guys welcome to SB basic
it's a nice quiet Saturday morning and
just enjoy my cup of coffee while I
think about what to do today so the crew
is still sleeping I am going to make an
open-faced omelet I think the cooking of
the bacon and the onions will get the
crew out of bed pretty quick so I'm
going to show you how I do it
but first I'm gonna enjoy this nice cup
of coffee before a mystery

so the crew members on this boat is a
little funny they all have their own
preferences on how they like their eggs
one Lexus scrambled and overcooked
another one likes it over easy I'm not
picky
I can eat eggs whichever way except over
cup so I have figured out a way to
please the entire crew without becoming
a short-order cook an open-faced omelet

so the first thing I'm going to do is
start on my toppings or filling and for
today it's gonna be bacon and onions you
can use whatever you have in the fridge
you can do a vegetarian one and just go
with peppers mushrooms tomatoes if you'd
like for today we're gonna do bacon and
onions you cannot go wrong with that so
now we're gonna give the bacon and
onions a medium chop not too big not too
small so then they cook evenly
so once the pan is searing hot I will
throw in the bacon soften that up before
I add the onions in I love cooking bacon
in the morning there's nothing better
than the smell of cooked bacon and
onions that fills the cabin plus it gets
the crewmembers moving out of their
business much faster than any alarm
clock so for the eggs you just use as
many as you want depending on how many
people are eating I'm using four eggs
this morning and I add a splash of cream
or milk just to give it a little
lightness to it just whisk it together I
don't add any salt and pepper at this
point until it goes in
so once your pan is up to temperature
you'll lightly grease it before you pour
in your egg mixture I like to pull the
egg mixture once it cooks around the
edges into the middle kind of gives it a
ribbon effect and it cooks it more
evenly so now the fun begins we're
almost done and ready to eat but first
I'm going to add the toppings the crew
likes cheese so we're gonna add cheese I
would prefer it not to have cheese I
don't need it but they do so we're going
to add the cheese add the bacon and
onions and bring the heat down to very
low temperature we're just about done I
like to also sprinkle it with my spring
mix which is obviously the usual
cilantro scallion onion just to give a
brightness and a little freshness to it
and top it with avocado we're almost
ready to eat you compare this with toast
fresh fruit an English muffin or a bagel
even we're going to serve this with a
side of hash browns breakfast was a hit

do the dishes you're never gonna hear
